Take a knife and cut the crust flesh with the edge of the pie pan. Put your filling in.

Second, put your top crust on. I use a knife and cut around the edge of the top crust, leaving about 1/2-3/4 of an inch extra crust beyond the edge of the pan. Now I take the top crust that is hanging over and tuck it underneath the edge of the bottom crust. Work your way around the crust until you have a nice edge..it will just be kind of rounded where the crusts are rolled together. Sometimes I have to squeeze the crust around to parts that are a little thinner. Some places get too fat, so I try to even it out before I make my nice edge.

Lastly, Once the crust is all sealed around, then you can make the nice edging. I had my son take a picture of my hands (below) showing how to pinch the crust (using a piece of paper where the crust will be). To make this nice edge, take your left hand and hold your thumb and index finger up as shown above. Take the index finger of your right hand...hold the left hand on one side of the crust edge, and your right hand on the other. Place your fingers on both sides of the crust edge and push together gently. This will make one indented pattern. Take your fingers off and move them over to make the next indented pattern. Continue this on around the crust. If you kind of pinch your thumb and index fingers on your left hand, it makes the pattern a little more defined. But don't pinch too much!

I hope this makes sense. The next time I make some pie I'll take some pictures of this process and add them in here in place of this picture. Have fun!

Yellow Cake

2 1/3 cup whole wheat pastry flour
1/3 cup nonfat dry milk powder
3 teaspoons baking powder
3/4 teaspoons sea salt
1 1/2 cups Sucanat or organic sugar
1/2 cup butter, melted
2 eggs
1 cup water
1 teaspoon vanilla extract

Preheat oven to 350 degrees. This will be very hot so use caution!

Double Chocolate Mint Treasures

¾ c. butter, softened

½ c. brown sugar or Sucanat

½ c. sugar

1 egg

1 tsp. vanilla

1 tsp. peppermint extract

1 ½ cups whole-wheat flour

½ c. cocoa

1 tsp. baking soda

¼ tsp. salt

1 c. chocolate chips

Cream together butter and sugars. Sprinkle some chocolate chips on the top (before flipping to cook the second side).

NOTE: This recipe makes a BUNCH of snack cakes! Put them either in the refrigerator or freezer (if you aren't going to eat them within a few days). Pull them out for snacks...pop them in the microwave to warm them and eat them like a cookie...yummy! My kids loved these and they are much better for them than having a cookie for a snack. (I actually start these a whole 24 hours before I want to bake them. Allowing the flour to soak for 24 hours gives you the best nutritional benefit! My husband doesn't like the soy sauce type sweet and sour, but LOVES this recipe! Slowly add milk and cook on medium until the mixture is thickened. Add the cheese and stir until cheese is melted. Add the milk/cheese mixture to the vegetables and stir; then add the meat and stir. Heat through and serve!

~~~~~~~~~~~~~~~~~~~~~
Note:  This makes a LOT of soup!  When I make this I usually serve homemade rolls with it.  Our family of 7 eats heartily and we still have enough left for another whole meal.  I freeze the leftovers in a gallon ice-cream tub.  To serve the leftovers, I take the tub out of the freezer in the morning and let it thaw on the counter for a while, then put it in the refrigerator.  Within a couple hours of dinner time, transfer soup to pot (it will most likely be partially frozen still) and heat on low heat to finish thawing and heating.  Enjoy!
Chicken & Noodles & Dumplings
CHICKEN & NOODLES:
¼ teaspoon pepper
3 cups chicken broth
6-8 baby carrots, sliced or diced
2 teaspoon minced onion
1 cup egg noodles
1 can cream of chicken soup (can use homemade)
1 can cream of mushroom soup
1 ½ cups water
1 cup milk
1-2 cooked chicken breasts, chopped
½ cup celery, chopped
Bring broth and water to boil. You could then use it for a crockpot meal by thawing and heating in the crockpot.
Breaded Pork Chops with Seasoned Bread Crumbs
6 pork chops (or however many you want to cook)
1 cup whole wheat flour
1 cup milk
Seasoned Bread Crumbs (mix in a bowl):
2 cups bread crumbs (blend dry bread in blender)
2 Tablespoons Parmesan cheese
1 Tablespoon dried parsley
1 teaspoon garlic powder
1 teaspoon salt
¼ teaspoon oregano
¼ teaspoon basil
1 teaspoon Italian seasonings (optional)
Begin by preheating your oven to 350 degrees.  You will need 3 bowls for this recipe.  One for your flour, one for the milk, and one for the seasoned bread crumbs (note: you may not use all of these bread crumbs, so you will want to take some out of the bowl and just add you need it).  Grease a 9x13 or 11x15 inch pan.
Dip each pork chop first into the flour, then into the milk and finally into the bread crumb mix.  Lay the chops in the prepared pan.  Put a small amount of water in the bottom of the pan, so the bottom is just covered.  Bake at 350 degrees for 30 minutes, then reduce heat to 325 degrees and bake another 20 minutes.
Tip:  I save all the crusts from my homemade bread that don’t get eaten, and any bread that has gotten too dry - I tear it up and freeze it in freezer bags. Add 3 tablespoons of whey (or lemon juice). Cover the bowl, and let it sit out overnight until you make dinner tomorrow.
THE NEXT EVENING
You will want to get the rice cooking first.  Bring 4 cups water to a boil, drain the rice you have been soaking, and add the rice to the boiling water.  Reduce heat to a simmer and put lid on pan.  Cook rice according to package directions (usually 45-55 minutes).
While the rice is cooking, brown your ground beef in a large skillet.  Once the rice is done, add the cooked rice, ¼ cup butter, and the salt and pepper (and taco seasoning if using) to your ground beef.  Stir.  Keep on low heat and cover to keep warm.  Next, cook your vegetables (steaming is best).  Once the vegetables are done, add to the beef and rice.
You can top the beef and rice with cheddar cheese, salsa, etc.  If desired, serve inside tortillas, or just eat plain.  You can also choose different types of mixed vegetables to use.  My family does not care for things like broccoli and cauliflower, so we stick to the corn/peas/green beans/carrots mixed vegetables.
Note: You can make this recipe using chopped up pork or chicken too!  This makes a LOT, so I freeze any leftovers and use it as a base for chicken & rice soup.  Simply put in crockpot and add some chicken broth, and cooked chicken for a yummy soup!  I also had the idea of using leftovers to make Sweet & Sour Chicken or Pork.  Simply heat up your rice/pork or chicken/veggie mixture, make the Sweet & Sour Sauce, and serve!  Yummy!
Shake & Bake Chicken
2 lbs. If you don’t mind the cost, then go for it.  I did want to include a homemade maple syrup recipe here, however, because I believe that making the syrup from scratch (even though it has sugar in it) is better for you than the store-bought stuff.  I like this recipe because it is a bit thicker than most other homemade syrups I have tried.
Burrito Casserole
6 cups cooked beans & rice (leftovers from Burrito recipe)
Cream of chicken soup (homemade preferred, or use 1 can store-bought)
3/4 cup salsa
1 cup (1/2 lb.) ground beef, browned and drained
Tortilla Chips (make your own or store-bought)
1-2 cups Shredded Cheddar Cheese
Preheat oven to 350 degrees. Knead on Speed 1, quickly adding in the additional flour until the dough pulls away from side of bowl.  Then knead for 6-8 minutes on Speed 2.  **See note below for 2-rise option.  Remove dough, divide into 5 loaves, and place in pans to rise.  Let rise for about 30-45 minutes or until double in size (I turn the oven on for a few minutes to warm it up and then turn it off.  I then place the bread pans in the oven with the oven light on to rise.  When bread is done rising, turn oven on to 350 degrees and bake for 25-30 minutes or until tops and sides of bread are brown.  Remove from pans and let cool completely before storing.  This bread freezes well too!
To make cinnamon-raisin bread, add 2 1/2 tsp. cinnamon and 2 cups chopped raisins to the dough when kneading.
**If you want, you can allow the dough to rise in a large, greased bowl, once before dividing up and letting it rise in the pans.  This is actually recommended, but for time sake I have always just did the one rise in the pans.  I recently started using more wheat flour (6 wheat/4 white) and the second rise has really helped the texture of the bread!  This is a great step as you move towards using ALL whole wheat flour. So...for the past almost 19 years we have had pizza for dinner pretty much every Friday night.  When we were newly married, we would make a pizza using the Jiffy pizza crust mixes, pizza sauce, and hamburger and cheese.  It was a pretty easy pizza to make and we enjoyed it.  Then we went through a phase where we ate the premade pizza crusts from the store and then added our own toppings and baked it.  That was pretty good too.  But then....I started making a yeast bread crust and we have never turned back!
I recently have had to graduate to preparing two pizzas for our growing family instead of the usual one.  I love this crust recipe..it is quick and easy to mix up in my Bosch mixer and I can double the recipe to make two crusts.  It raises so nice and tastes so good!  Since I am making two pizzas now, I make one hamburger and sausage and one Canadian bacon and pineapple.  Yummy!
I would like to share with you our pizza crust recipe as well as a recipe for pizza sauce.  I can't remember where I got the recipe for the sauce.  It tastes great and is quick and easy to make...and much cheaper than the store-bought pizza sauce!  It has been fun having this family "tradition" of having pizza every Friday.  The kids have enjoyed it too.  We kind of make Friday night our family night...with pizza, then maybe a game or movie, then ice cream later!
I hope you enjoy these recipes...and maybe be inspired to start your own "pizza night" too!
PIZZA CRUST (makes 1 large crust - can double to make 2 crusts)
2 tablespoons olive oil
1 teaspoon sugar or honey
1 teaspoon sea salt
2 1/2 cups flour (I use 1 wheat and 1 1/2 white, but use whatever combination you like)
1 cup warm water
1 Tablespoon yeast
Preheat oven to 425 degrees.
Put above ingredients into heavy duty mixer.  Mix and knead for about 8 minutes.  If mixing by hand, dissolve yeast in warm water, then add remaining ingredients and mix well.  You will need to use your hands to work in all the flour and then knead it for about 10 minutes to make a nice smooth dough.
Roll into a ball and place on greased (buttered) pizza pan.
HINT: Place a wet dishcloth on the counter and put your pizza pan on top of it while you roll out the crust.  This keeps the pizza pan from moving all over the place!
Once the crust is rolled out to the edges, spread with sauce (recipe below) and toppings.
Bake in 425 degree oven for 15-20 minutes or until cheese is lightly browned and crust is done.
_______________
PIZZA SAUCE (makes enough sauce for 1 pizza-can be doubled for 2 pizzas)
8 oz. can tomato sauce
1 teaspoon sugar or honey
1/2 teaspoon basil
1/4 teaspoon oregano
1/4 teaspoon garlic powder
1 teaspoon onion powder
1 tablespoon olive oil for flavoring (optional)
Mix the above ingredients in a small bowl, then it is ready to use!
If I double this recipe, I use two small bowls, keeping the two batches separate.  This makes it easier to divide up the sauce between the two pizzas!
Blonde Brownies - Healthy Version
I am at it again...trying to convert some of our favorite recipes to be more healthy! Here is what you do:  purchase some cheap washclothes (the kind you can buy at Walmart in a 10-pack).  Buy a white or ivory color of washcloth so you can easily keep these "cleaning" cloths separate from your regular washcloths.
Simply use these washcloths instead of the Swiffer cloths, attaching it to the Swiffer mop the same way you would the store-bought ones.  The washcloth will be a bit big, so you will have some extra washcloth flopping on the top of the mop, but that is ok.
WET MOP:  Run some hot water in a bowl in the sink and add some cleaner (whatever you use to clean your floors).  Soak several washcloths at a time so you can rotate.  Take one out, wring out most (but not all) the water, and attach to your Swiffer mop.  Now mop your floor!  When it gets too dry, take it off, throw it in the hot water solution, and get another washcloth out.
DRY MOP:  Attach a dry washcloth to your Swiffer mop and dustmop with it "as is" or spray a bit of furniture polish on first (just be careful as this will make SLICK floors...speaking from experience!)
When you are done mopping all your floors, throw these washcloths in with your towels to wash.  This works great and is SO much cheaper that buying the store-bought cloths. It is very easy to make and very inexpensive!  I have found this recipe to work great so far.  I know a lot depends on the water you have...whether it is hard water, etc...but this works great for me.  Here it is:
Mix the following in a small tupperware container with a lid:
1 cup Borax
1 cup Baking Soda
*2 cups dishwasher detergent (cheap powder kind)
*This is optional, but I have found it does a bit better if this is added.  I think it really depends of your water.  Try the borax and baking soda solution first.  If it doesn't seem to clean good, then try adding in the store-bought dishwasher detergent.
To use:  Put 1 Tablespoon of detergent into your dishwasher's detergent compartment..but DON'T CLOSE IT (or just use the pre-wash compartment)!   Run your dishwasher as normal.  If you have hard water, you may need to use more detergent..up to 3 Tablespoons.  I used 3 Tablespoons at first and it was way to much.  It left white film on the dishes.  You'll just have to experiment and see what works best for you.
I also fill the rinse aid compartment with white vinegar once a week or so.  It leaves the dishes sparkling clean!
Brown Sugar Facial Scrub
Here is the recipe for a brown sugar facial scrub that I mixed up yesterday.  I have been using it along with my Dollar Store Lotion on my face and it has done wonders!  My skin is so soft and smooth!  My 15 year old daughter has also been using it and it has worked great for her too!  Here's the recipe:
Brown Sugar Facial Scrub
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup sweet almond oil (**see note below)
2 teaspoons vanilla extract
1 tablespoon ground oatmeal
1 teaspoon nutmeg
Mix everything together and put in a jar with a lid.  Enjoy!
To Use:  Wet face with a warm washcloth.  Put a little bit of the scrub on the tips of your fingers and rub over whole face (moisten fingers if needed).  Gently massage over face for about 1 minute.  Rinse face with warm water.  Pat dry.  Apply lotion.
** I tried using coconut oil instead of the sweet almond oil and I really like it.  The almond oil tended to separate all the time and I would have to mix it up before I used it each time.  The coconut oil hardens up a bit and makes the scrub more of a paste.  Simply melt 1/2 cup coconut oil, mix up with the rest of the ingredients, and then let sit on counter to cool down and harden a bit.  Stir every so often to keep the coconut oil mixed in good as it cools.  Enjoy!
Homemade Stick Deodorant
I have been wanting to try to make my own deodorant for some time now, but never seemed to find a good recipe.  Well, I think I found one that works great!  I made some yesterday and it really does work and it is easy to make.  Here is the recipe:
Homemade Stick Deodorant
1/4 cup Baking soda
1/4 cup Cornstarch
4-5 Tablespoons Coconut oil, melted
Fragrance oil (optional - I added a few drops of sweet vanilla scent and it smells so good!)
Mix baking soda and cornstarch.  If you use about 1/4 cup of each, it will make enough to fill an old deodorant container.  Melt the coconut oil and add slowly, a little at a time,  to the baking soda and cornstarch mix.  Mix with a spoon and keep adding coconut oil until the mixture is pretty firm but holds together.  You don't want it runny or too soft.
Scoop the mixture into an old deodorant container to harden.  Once it hardens it is ready to use.
Note:  When I made this, it was not hard at all when I put it in the container.  I didn't realize it would harden up so much.  After it hardened I realized that I probably could have added a bit more coconut oil and it would have been ok.  So, experiment and see what works best.  You don't want it too hard, or it won't go on very good.  But too soft won't work either.  Have fun!
Dollar Store Lotion
Here is the awesome lotion recipe I promised!  Enjoy!
DOLLAR STORE LOTION
This recipe is not a true homemade lotion, but one made with pre-made ingredients.  I found this recipe on the internet (there are many versions of this floating around) and tried it.  Everyone who makes it has nothing but good to say about it.  It can be used for your whole body, including your face!  I have been using it and it does a great job of keeping my skin soft during the cold winter months.  Put some on your heels and put socks on before going to bed to keep your heels soft and not cracked.  I also love it on my face.  All the ingredients can be purchased at our Dollar General, Family Dollar, or Dollar Tree stores for $1 each.
2  15-oz. bottles baby lotion (I used the shea & cocoa butter one, but you can use the regular pink one or the lavender one too)
2  8-oz. jars of Vitamin E Cream
1  7.5 oz. jar Vaseline (can use homemade un-petroleum jelly - see my recipe in another post!)
Place all ingredients in your mixer and mix well.  I put the vaseline in the microwave for a bit to soften it up and help it mix up better.  When it is all mixed up really well, put the lotion back into the bottles you just emptied, using a funnel.  You can also purchase some small containers or jars to store your lotion in.  This makes a wonderful gift too!
Homemade Un-Petroleum Jelly
I make a wonderful lotion that has petroleum jelly in it and I was wanting to find an alternative to using jelly with petroleum in it....well I found it! Mix ½ cup honey into 1 cup of warm filtered water until dissolved (or just add 3 dropper-fuls of SweetLeaf Liquid Stevia-Lemon Drop, see note below).  Add this to the pitcher.  Add enough filtered water to fill it up.
Stir it all up and chill in the refrigerator.
If you don’t have fresh lemons to use, you can use bottled lemon juice.  I have done this and it still tastes great.  Instead of the fresh lemon juice, use about 6-8 tablespoons of bottled lemon juice for 2 quarts.  Fresh lemons give you the best nutrition, but the bottled juice works too.
Note:  If you want a sugar-free, calorie-free option, add 3 dropper-fuls of the SweetLeaf Liquid Stevia (Lemon Drop flavor) to your pitcher instead of the honey. I put 4 slices down, 2x2, then cut the 5th slice in half and put it on the end.
Pour one-half of the egg mixture on top of the bread, then sprinkle some cinnamon on top of that.
