Double Chocolate Mint Treasures

  • ¾ c. butter, softened
  • ½ c. brown sugar or Sucanat
  • ½ c. sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 tsp. peppermint extract
  • 1 ½ cups whole-wheat flour
  • ½ c. cocoa
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • 1 c. chocolate chips

Cream together butter and sugars. Add egg, vanilla and peppermint extract. Combine dry ingredients in a bowl. Add to wet ingredients and then stir in chocolate chips.

Bake at 350 for 10 minutes on greased cookie sheet.
