Taco Rice

  • 1 pound ground beef
  • 1 teaspoon minced onion
  • 1 package taco seasoning mix
  • 1 can diced tomatoes
  • 2 cups cooked rice (we use brown rice)
  • 2 cups shredded cheddar cheese
  • tortillas & lettuce

Brown meat and drain. Combine meat, onion, taco seasoning, cooked rice, and tomatoes in large pan. Simmer about 5 minutes.

Serve with tortillas, lettuce, and cheese.

Note: This recipe freezes well. Put meal sized portions in ziplock bags or containers and freeze. To use, thaw and reheat on stove.
