Sheri's Healthy Oatmeal & Raisin Cookies
- ½ cup butter, softened
- ¼ cup pure maple syrup
- ¼ cup honey
- 3 eggs
- 1 teaspoon vanilla
- 1 cup whole wheat flour
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 ½ teaspoon baking powder
- 1 cup raisins
- 3 cups rolled or quick oats
- 1 cup chocolate chips (optional)
Cream butter, syrup, and honey until smooth. Add eggs and vanilla and mix. Mix dry ingredients (except raisins and oats) in a small bowl, then add and mix well. Stir in the raisins and oats (and chips if using). Drop by spoonfuls onto cookie sheets. Bake at 375 degrees for 10 minutes. Makes about 3 1/2 dozen cookies.
