Wacky Cake


  • 1 1/3 c. unbleached white flour or whole wheat pastry flour
  • 1 c. brown sugar
  • ¼ c. Cocoa
  • 1 t. baking soda
  • ½ t. salt
  • 1/3 c. oil or butter, melted
  • 1 t. vinegar
  • ½ t. vanilla
  • 1 c. water

Mix together all the ingredients in the above order and pour into an ungreased 8x8x2 pan. (double the recipe and make a 9X13 cake!) Bake at 350 degrees for 35 minutes.

Sprinkle with powdered sugar or frost with frosting. This is a very moist cake! I use this recipe for our birthday cakes!
